While I am thinking of grilling, here is an idea for grilled veggies, specifically zucchini...I like to marinate sliced fresh zucchini in italian dressing, light or free dressing tastes just a great.
Marinate in baggie or bowl for about 15 minutes.
Place on grill if slices are bigger, or in foil boat, or pan specifically for grilling veggies
Grill until heated through on both sides, grill marks are a great indicator.
After heated toss with some parmesan cheese.
One thing I have noticed is the zucchini does cool off pretty quickly, so it is best served immediately.
