Easy Feta Chicken Bake



I found this one from the free quarterly magazine from Kraft Foods. Very simple!

Easy Feta Chicken Bake

Prep Time:10 min
Total Time:50 min

Makes: 6 servings

6 boneless skinless chicken breast halves (about 2 lb.)
2 Tbsp. lemon juice, divided -OR- 2 lemons
1/4 tsp. salt
1/4 tsp. black pepper
1 pkg. (4 oz.) ATHENOS Crumbled Feta Cheese with Basil & Tomato

OPTIONAL--
1/4 cup finely chopped red pepper
1/4 cup finely chopped fresh parsley

PREHEAT oven to 350°F. Arrange chicken in 13x9-inch baking dish.

DRIZZLE with 1 Tbsp. of the lemon juice (or juice from 1 lemon). Season with salt and black pepper. Top with feta cheese; drizzle with remaining 1 Tbsp. lemon juice (or 1 lemon).

BAKE 35 to 40 min. or until chicken is cooked through.
(Optional: Sprinkle with red pepper and parsley)

Julie's Hints: I would normally only make three pieces of chicken and still use 1 pkg of Feta. I like the feta! If you buy the Athenos brand feta, this receipe is on the inside of the lid.

Recommended Side: Pasta- A- Roni Angel Hair Pasta with Herbs are usually cheap $1/ box on sale!
