BBQ Beef Cups


Tried this one last night, and it was tasty...and easy!! Definitely recommend being in the mood for BBQ when making this one.

Preheat oven to 400

In muffin pan, press refrigerated biscuits (i used crescent rounds and they were good) into muffin tin up the sides

Brown 1 LB ground beef

Remove from heat

Drain

Add 1/2 cup BBQ sauce

1 TBSP chopped onion (I prefer red onion)

2 TBSP brown sugar

Mix well

Add mixture to muffin cups, there may be some mixture leftover

Bake in oven for 10 - 15 minutes, until biscuits are light brown

Remove from oven and sprinkle cups with shredded cheddar cheese

Return to oven for 1 - 2 minutes to melt cheese


These were really quick and easy! Went well with steamed broccoli.

I made these yesterday for lunch and was feeling rather lazy. So instead of the barbeque sauce, I put in some leftover pizza sauce and topped it with mozzarella. Not quite as good as the bbq version since I didn't use enough pizza sauce, but it was a fun tweak on the recipe.
P.S. How fun to see one of my recipes on here! Maybe we'll post some of our own soon.
