Chicken Taco Soup


  • 1 lb chicken breast
  • 1 can of corn (drained)
  • 1 can black beans
  • 1 can chili beans
  • 1 8 oz can of tomato sauce
  • 2 cans diced tomato with green chilies
  • 1 onion
  • 1 1/2 cup chicken broth
  • 1 taco seasoning packet

Place all ingredients in a crock pot and stir. Then add whole chicken breasts. (We use the onion in large chunks, only for flavor, but you can dice them if you love onion and bad breath.) Cook in crock pot for 6-12 hours on low temp. 10 minutes before eating, take out chicken and pull apart or cut up. Approximately 6 servings.

Tips:
If you love meat (Rachel and Crystal) or you have a husband that is a carnivore, use 2 lbs of chicken.
Serve with cheese, sour cream, chips for dipping or bread.
