Hummus

  • 2 cans garbanzo (chickpeas) beans, drained
  • 1/3 cup tahini
  • 1/4 cup lemon juice
  • 1 teaspoon salt
  • 2 cloves garlic, halved
  • 1 tablespoon olive oil
  • 1 pinch paprika
  • 1 teaspoon minced fresh parsley
1. Place the garbanzo beans, tahini, lemon juice, salt and garlic in a blender or food processor. I also threw some paprika and cummin in there. Blend until smooth. Transfer mixture to a serving bowl.

2. Drizzle olive oil over the garbanzo bean mixture. Sprinkle with paprika and parsley.

Notes: I didn't use any tahini and it still tasted great! I also had some problems getting the beans to mash well. With the blender, I had to add to do it in stages--add about a cup of the mixture, blend, and then take it out. Then add in another cup and continue. My friend used one of those hand blenders and had an easier time with it.
