Smashed Potato Soup

This is a great recipe for crockpots and cold winter days. It's incredibly simple but extremely tasty! From Better Homes and Gardens So-Easy Slow Cooker cook book pg. 117

3 1/2 pounds potatoes cut into 3/4inch cubes
1/2 cup chopped yellow and red sweet peppers
1 1/2 teaspoons bottled roasted chopped garlic
1/2 teaspoon ground black pepper
4 1/2 cups chicken broth
1/2 cup 1/2 and 1/2 or light cream
1 cup shredded cheddar cheese
1/2 cup thinly-sliced green onions

Directions
1. In a 4 to 6 quart slow cooker combine potatoes, peppers, garlic and black pepper. Pour the chicken broth over all of it

2. Cover and cook on low for 8 t0 10 hours or on high for 4 to 5 hours

3. Mash the potatoes slightly with potato masher. Stir in 1/2 and 1/2 or cream, chedder cheese, and the green onions

Serving suggestion:
top with cooked bacon and serve in bread bowl!

Also make sure to not smash the potatoes too much then it will come out more like a cream soup instead of a chunky soup like it's suppose to!

Yummmm, i will have to try this one out, i love that its in the crock pot :)
