Creamy Herb Baby Spinach Salad

By request from Julie....

A super yummy, summer salad where the star is really the creamy herb dressing.

Salad:
  • 6 cups baby spinach
  • 1-2 ripe avocados, diced
  • 1pint ripe cherry tomatoes, chopped (or you could use grape tomatoes)
  • roasted pine nuts

Dressing:
makes approx. 1cup
The dressing is definitely better when you used fresh herbs. And there is no better time than farmer's market season to do so. But, when I can't get fresh herbs, I have used dried herbs from the spice aisle and it is still delicious!

  • 3 T white wine vinegar
  • 2 T heavy cream
  • 1 tsp. Dijon mustard
  • 2 T mayo
  • 1/2 tsp. minced garlic
  • 1/2 cup canola oil
  • 1 T minced fresh parsley
  • 1 T minced fresh chives
  • 1 tsp. minced fresh tarragon
  • salt and pepper to taste

Place all ingredients in a jar with a lid. Seal and shake vigorously to combine. Can be refrigerated for a week. Return to room temp before using.
