By request from Julie....A super yummy, summer salad where the star is really the creamy herb dressing.
Salad:
- 6 cups baby spinach
- 1-2 ripe avocados, diced
- 1pint ripe cherry tomatoes, chopped (or you could use grape tomatoes)
- roasted pine nuts
Dressing:
makes approx. 1cup
The dressing is definitely better when you used fresh herbs. And there is no better time than farmer's market season to do so. But, when I can't get fresh herbs, I have used dried herbs from the spice aisle and it is still delicious!
- 3 T white wine vinegar
- 2 T heavy cream
- 1 tsp. Dijon mustard
- 2 T mayo
- 1/2 tsp. minced garlic
- 1/2 cup canola oil
- 1 T minced fresh parsley
- 1 T minced fresh chives
- 1 tsp. minced fresh tarragon
- salt and pepper to taste
Place all ingredients in a jar with a lid. Seal and shake vigorously to combine. Can be refrigerated for a week. Return to room temp before using.
