Chicken Fettuccine Cacciatore


Hi everyone,
I know it's been awhile since I have posted on here but I thought this recipie would be good for busy summer nights. it's quick and easy to make and a great light meal for summer!

What you Need:
1/2 pound Fettucine uncooked
2 tsps of oil
1lb of boneless skinless chicken breats cut into bite sized peices
1 cup green or red peppers
1 cup mushrooms
1 can (14 0z) diced tomatoes
1/2 cup zesty Italian salad dressing
1/2 cup mozzarella and parmesan cheese blend
1 tsp basil

How to Make it:
Cook the pasta as directed

-while the pasta is cooking heat the oil in a skillet on medium high heat. Add chicken and cook till no longer pink
-when chicken is no longer pink add the peppers and mushrooms; cook 3 to 5 mins until veggies are still crisp
-stir in tomatoes and dressing and cook on medium -low heat for 5 mins
-drain pasta and toss with chicken mixture
-top with cheese and basil

Changes I have made:
-I usually add onions (about a 1/2 cup) to the pepper and mushroom mixture...and since my hubby likes peppers alot i add both green and red peppers almost a cup of each.
- I also add more Italian dressing than it calls for...more like 1/2 a cup because i add more veggies and usually more pasta
- the only other change i make is that I season the chicken before I cook it in the oil...I usually use a Mrs. Dash flavor, the tomato basil garlic or the Italian medley one. but if you just wanted to season it with garlic and basil that would be good too!
