Here is a great recipe for broccoli that is nice change from the "normal" veggies and gets us ready for summer!!
Ingredients:
Several cups of fresh broccoli "trees"
5 tablespoons of olive oil
Parmesan cheese, grated
1 clove minced garlic (or more if you are like me and like garlic alot!)
salt and pepper
lemon zest from 1/2 lemon
juice of 1/2 lemon
toasted pine nuts optional (i did not add them)
Directions:
Chop the broccoli leaving some of the stem on the cuts
Transfer to a cookie sheet and sprinkle with the chopped garlic, salt and pepper.
Drizzle broccoli and garlic with olive oil.
Toss together with hands
Roast in the oven at 425 for 20 minutes or until slightly brown (watch the broccoli because i noticed it cooked faster than 20 minutes)
When there is just a few minutes left sprinkle the broccoli with cheese and lemon zest and juice. Return to the oven until cheese has melted
Toss once more and then transfer to plate or bowl for serving.

I don't normally like broccoli cooked, but this sounds good!
it is good even if you arn't a fan of broccoli at all!
