Potatoes Gratin

(Served with Panko-crusted chicken and roasted butternut squash)

This is my first post sharing a recipe- I hope y'all enjoy it! This is a recipe I learned from watching the "Next FoodNetwork Star." It is super easy and delicious. My family, even my two toddler boys, loves it and I have made it for company too with good reviews.

Food Network Potatoes Gratin

Ingrediants:
  • 2large Idaho Potatoes- roughly peeled and sliced into rounds
  • 1/2cup grated swiss cheese
  • 2 green onions- finely chopped, including part of the green stems
  • salt and pepper
  • heavy whipping cream
Directions:
  1. Spray muffin tin with cooking spray. Layer potato slices and cheese and onion in the wells. (I put a couple slices of potato and then some cheese and then the onions and more potato and then top it all with more cheese.)
  2. Sprinkle the top of each with a bit of salt and pepper. Add 2Tbsp. heavy cream to each well.
  3. Cover with foil and bake @ 375degrees for 30-40min, removing the foil halfway through. Let cool slightly on a baking rack before trying to remove from the tin.
  4. Serve and enjoy. :)
